Ingredients
  

For the Pasta
  • 8 oz Pasta of your choice (Fusilli or fettuccine)
  • 1 tbsp Salt for boiling water
For the Sauce
  • 2 tbsp Olive oil
  • 3 cloves Garlic minced
  • 8 oz Mushrooms sliced button or cremini
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese freshly grated, optional
  • 1/4 cup Fresh parsley chopped for garnish
Optional Add-ins
  • Spinach for added nutrition
  • Protein such as grilled chicken or shrimp

Method
 

Cooking Steps
  1. In a large pot, bring salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, drain, and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add sliced mushrooms and cook for 5-7 minutes until softened.
  3. Lower the heat and add heavy cream, stirring continuously. Let it simmer for 3-4 minutes until it thickens slightly.
  4. Combine the drained pasta with the creamy sauce, mixing gently. If the sauce is too thick, add reserved pasta water 1 tablespoon at a time.
  5. Remove from heat and stir in Parmesan cheese if using. Garnish with parsley and serve immediately.
